A long time ago I had set my email display name to read as me and my ex-wife (i.e. Bob & Sally Smith). After the split I changed it to just mine. Recently someone sent a group email using an old contact for me which used the old display name. Apparently someone else in the group added me to their contact list and now anything from them shows the old name. As this is a bit disturbing to my current wife, is there anything I can do from my end to change the display name or do I need the other people to delete their contact for me and make a new one with my current settings? Thanks in advance for any suggestions.

Take option number two, plus Valentine's Day is Friday.
The display name substitution is occurring within the email clients of the two individuals you mentioned; it's NOT within Spectrum's email system. Request each of them to either edit their stored e-mail contact information for you, or delete it totally and capture it again from a new email which you will send them. In the future you may see the same thing from others who were part of that group email list.
